INGREDIENTS:
• 2 cups dried or fresh organic elderberries
• 4 cups cold water
• 2–3 tsp. organic dried or fresh ginger root
• A few organic cinnamon sticks
• 1 cup honey, maple syrup, or agave
Tip: An easy way to separate fresh berries from the stems is to briefly freeze them while on the stem, then remove berries while still frozen.
DIRECTIONS:
- Combine the elderberries and herbs with cold water in a pot and bring to a boil.
- Reduce the heat and let everything simmer for 30–40 minutes
- Remove from heat and allow it to steep for about an hour.
- Strain the berries and herbs through cheesecloth or a fine strainer, compost the used berries, and let the liquid cool until just above room temperature.
- Stir in your honey or sweetener of choice,
- Bottle in glass and store in the refrigerator.
- Use within 2-3 months.
